1½ cup chopped
tomatoes
1 cup chopped watermelon
¼ cup thinly sliced red onion
1 T chopped fresh mint
1 T olive oil
1 T balsamic vinegar
salt and black pepper
Arrange tomatoes, watermelon and onion on a large plate or
small platter. Sprinkle with fresh mint, salt and pepper, then drizzle olive
oil and balsamic vinegar.
